Sourcing and recommending local products to promote provenance
Hillview came to us with four key areas to develop. Bel, the Hillview group catering manager was struggling to develop a menu to suit the multiple sites and their varying skill levels, space constraints and ranging equipment availability. Working with multiple suppliers across the sites, they also struggled to ensure the quality and provenance of the fresh produce on their menu which meant that the offering at one site varied greatly to another in a different location.
Choosing Creed, who can introduce new, locally sourced products to promote provenance to customers. Creed’s Executive Development Chef visited the Studley site and worked along staff in order to fully understand Hillview’s needs. Hillview also use Creed’s Development Kitchen to trial new products.
We worked with Bel and her team to introduce new, locally sourced products to promote provenance to customers. By using us, Bel managed to centralise all of the groups ordering thus ensuring that all sites meet the high level of quality and provenance required. Hillview are also regular visitors to our Development Kitchen, with staff working alongside our Executive Development Chef, Rob Owen to produce seasonal menu’s for sites and to train staff in the key skills needed to deliver restaurant standard food. We have also worked to develop a core list of products such as hand finished cakes and freezer to plate solutions to simplify the offering and increase the efficiency of the kitchen staff.
