What's in Season March

With the harsh winter soon to be behind us we are now looking onwards to spring days. We have once again put together a monthly guide of what fruits and vegetables are in season this month. With winter root vegetables fading out we will see a new variety of British produce become available over the next few months.

Jersey Royals

The season for this staple variety of potato, runs from March through to July With a nutty, earth and sweet flavour these potatoes can be enjoyed with plentlyplenty of foods. They are very easy to cook and are best when steamed and served with a knob of butter as a quick accompaniment to salads and fish - these are sure to go down a treat!


Leeks

This surprisingly versatile sweet flavoured vegetable can be used to liven up all sorts of dishes. Commonly used in soups or paired easily with potatoes, but their flavours also work great in pastas and risottos.

Chefs Tip: Leeks can be cooked in a variety of way they can be grilled, roasted or sautéed, but be careful not to overcook them or else you will end up with a very mushy texture. Also make sure to wash them thoroughly to remove all of the dirt between the leaves.


Swede

Later this month we see Swede start to go out of season so now will be the time to make the most of it!. A rich source of vitamin C, the flavours of this vegetable deepen through the cooking process. The skin on the swede has a great ability to absorb fat and becomes sweeter through a slower cooking process, making it ideal for roasts. Roast, boil, steam or stir fry this veg – the options are endless or more unconventionally, raw swede can be grated and added to a salad.
