With the cold winter months behind us and warmer weather on the horizon. We see much more locally grown produce coming into season over the next few months, now it the perfect time to incorporate this fresh produce onto spring menus.

Wye Valley English Asparagus


Wye Valley supply locally grown produce that is hand-harvested and then hydro-cooled to 2c within the hour. This process ensures that the produce stays fresh and flavourful. Asparagus is a versatile ingredient as it can be used to levelled up a delicious main course or thrown into a salad for a quick lunch. It can be cooked in a variety of methods; BBQ, boiled, quickly microwaved, but most commonly, steamed and roasted.

Lettuce


Available in a vast number of varieties and colours, from bright reds to vibrant greens, lettuce is a staple ingredient. The fresh crisp leaves can be eaten raw in salads served up with a homemade vinaigrette, but it can also be braised as a side dish with flavoured dressings or use larger leaves as a healthy alternative to a wrap.


Rocket


This peppery leaf can be used to give a flavourful kick to many dishes, such as pesto, or paired with spinach quiches and summer salads. With a bold flavour, including rocket into a dish can be a great way to implement ‘All in The Senses’ trend using bold flavours to include a sensory exploration of taste.

When it comes to British fruit, we are still a few months away before we start cramming bowls with British berries, but we do have new supply of British outdoor Rhubarb coming available this month, which works better in jams and chutneys.
