Vegan Butternut Squash Parcel


1x Butternut Squash (600312)

100g Cashew Nuts (144711)

3 x Garlic heads (601041)

1 x Onion (601081)

200g Sliced Mushrooms (609342)

Fresh Sage (600815)

Fresh Thyme (600810)

Puff Pastry Discs (816070)

Soya Milk (087491)


Serves: 1


  1. Preheat the oven to 180ºc
  2. Prepare the butternut squash (600312) – split into half, dicing one end and roughly chopping the other into two
  3. Place in the oven for 25min or until golden brown
  4. Pan fry the cashew nuts (144711) until slightly roasted and put to the side
  5. Chop three heads of garlic (601041) and one onion (601081)
  6. Fry the onion and garlic in a pan with 200g of sliced mushrooms (609342)
  7. Dice fresh sage (600815) and thyme (600810) and add to the pan
  8. Once softened add to the bowl of nuts
  9. Scoop out the squash halves and mash along with the roasted cubes, mix well
  10. Using the puff pastry discs (816070) Place 110-120g of filling into the centre of the disc and cover with the second disc
  11. Brush the base with soya milk (087491)
  12. Pinch and then trim excess pastry away
  13. Glaze with more soya milk and place in the oven for 20 – 25 min
