Garlic and Herb Chicken Skewers with Mediterranean Cous Cous


4 x Garlic and herb marinated chicken fillets 900823

1 x Red pepper 600660

1 x Green pepper 600670

1 x Red onion 601101

250g Country Range cous cous 155361

Tsp Paprika 189371, cumin 189381 and coriander 189501

Pomegranate seeds 601735

Serves: 4


  1. Dice the chicken fillets into chunks and skewer (1 fillet per person)
  2. Roast in the oven at 180c for 20-25 min until cooked or on a BBQ
  3. Dice the red and green peppers, onion and chilli into small chunks
  4. Add the diced vegetables to the cous cous and cover in boiling water, cover in clingfilm and leave to sit for 5 minutes
  5. Fork through and add a teaspoon of paprika, cumin and coriander for flavour
  6. Add a splash of olive oil to keep the cous cous loose
  7. Plate up with the chicken skewers and add some pomegranate seeds and coriander to finish
